Who says you need a backyard or a beach bonfire to throw an epic seafood boil? With a little planning and a big pot, you can bring all the flavor and fun of a classic Southern-style boil right into your condo kitchen—no backyard required. This is your guide to throwing down a feast that'll make your neighbors wish they'd been invited.
There’s something wildly satisfying about gathering friends around a steaming pot filled with spicy shrimp, potatoes, corn on the cob, and andouille sausage, all tossed in garlic butter and served right at your table. It’s casual, messy, and totally delicious—the kind of meal that turns a regular Saturday into a memorable event.
Roll up your sleeves and grab a cold drink, and let’s get cooking.
Serves: 4–6 people
Prep Time: 15 min
Cook Time: 30 min
Skill Level: Easy, laid-back, and delicious
What You’ll Need:
- 2 lbs fresh Gulf shrimp (shell-on for max flavor)
- 1 lb andouille sausage, sliced
- 4 ears corn on the cob, halved
- 1.5 lbs baby red or gold potatoes
- 1 large onion, quartered
- 3–4 cloves garlic, smashed
- 1 lemon, halved (plus extra wedges for serving)
- 1–2 tbsp Old Bay seasoning (or your favorite seafood boil spice)
- 2–3 tsp salt
- 4 tbsp butter, melted (for drizzling)
- Fresh parsley for garnish (optional)
How to Make It:
- Boil water: Fill a large stockpot with water (about 5–6 quarts). Add salt, Old Bay, onion, garlic, and lemon halves. Bring to a rolling boil.
- Cook potatoes: Add potatoes and boil for about 10–12 minutes or until just fork-tender.
- Add corn and sausage: Toss in corn and sausage, and cook for another 7–8 minutes.
- Add shrimp last: Add shrimp and cook just until pink and opaque—about 2–3 minutes. Don’t overcook!
- Drain & serve: Carefully drain everything and transfer to a large tray, sheet pan, or cover your clean kitchen counter top with butcher paper or newspaper for a rustic seafood spread. Spread it out evenly so the shrimp, corn, sausage, and potatoes are beautifully displayed and easy for everyone to reach.
- Finishing touch: Sprinkle on chopped parsley, lay out lemon wedges, and maybe even a few pats of extra butter to melt over the top. If you choose to serve it on a tray or sheet pan, place in the center of the table with tongs or small serving forks nearby. It still feels casual and hands-on, but with a little added structure.
Extra Tips:
- Add a few side bowls for shells, hand wipes or damp towels, and a chilled drink station nearby—and you’ve just hosted a boil like a pro, no beach required.
- The beauty of the boil is the easy cleanup. Once everyone’s full, roll up the butcher or newspaper with the shells and scraps inside and toss it. Wipe down the counter, wash the pot, and you’re done.
