
Even in FL, the evenings can get chilly certain times of the year, and there’s nothing better than a nice warm bowl of hearty soup to warm your bones on those cooler days!
My mom was KNOWN for her soups. Every Christmas, our gift from her was many of her soups. She made them for months, froze them, and we were grinning from ear to ear on Christmas Day as we drove home with our cooler full of them! From chili to vegetable soup, she knew how to make the best soup and they made the best gifts that lasted us all season long until the warmer spring months finally showed up!
They were all our favorites, but this is one that holds a special place in our hearts. When you find yourself wanting a hearty bowl of soup, we hope you try this recipe out.
Pasta e Fagioli Soup
Ingredients:
- 1# of Ground Chuck
- 1 Cup of Diced Onion
- 1 Cup of Chopped Carrots
- 1 Cup of Finely Chopped Celery
- 2 Cloves of Minced Garlic
- 2 (14.5 oz) Cans of Petite Diced Tomatoes
- 1 (15-oz) Can of Red Kidney Beans (w/Liquid)
- 1 (15-oz) Can of Great Northern Beans (w/Liquid)
- 1 (15-oz) Can of Tomato Sauce
- 1 (12-oz) Can of V-8
- 1 Tsp of White Vinegar
- 1-1/2 Tsp of Salt
- 1 Tsp of Oregano
- 1 Tsp of Basil
- 1/2 Tsp Black Pepper
- 1/2 Tsp of Thyme
- 1/2 Pound of Ditalini Pasta
Instructions:
- In a soup pot, brown meat and drain.
- Add onion, carrots, celery, and garlic.
- Saute about 10 minutes, then add the remaining ingredients EXCEPT the pasta.
- Meanwhile, cook pasta in boiling water for about 7 minutes (you want it al dente).
- Drain pasta and add to the soup.
- Simmer about 5 minutes longer. This can be cooked in a crock pot on low for 4-6 hours for even better flavor.
- Serve with a side salad and/or garlic bread.
