Prep Time – 10-15 Minutes Cook Time – 5 Minutes Serves – 4
Ingredients:
- 1/2 Cup of Olive Oil
- 2 Tsp Minced Garlic
- 2-3 Green Onions, Sliced
- 1 (14-oz) Can of Diced Fire Roasted Tomatoes w/Basil, Oregano & Garlic
- 2-1/2 Tsp Dried Basil
- 1 Tsp Sea Salt
- 1/4 Tsp Pepper
- 8 oz Angel Hair Pasta (Or Pasta of Your Choice)
- Fresh Grated Parmesan Cheese, To Taste
- 40-50 Medium Uncooked Shrimp, Peeled & Deveined, Tails Off
Instructions:
- Prepare the angel hair pasta as directed, drain (saving some of the pasta water for later), and set aside.
- In a large skillet or wok, heat the olive oil over medium heat.
- Add the garlic and green onions and stir-fry for about a minute.
- Stir in the tomatoes, basil, salt and pepper, and cook for an additional 2 minutes.
- Add the cooked pasta and shrimp to the tomato mixture, tossing gently to combine.
- Stir for about 3 minutes, or until everything is well coated and the shrimp are fully cooked through.
- If the mixture appears a bit dry, stir in a splash of the reserved pasta water to loosen it up.
- To serve, dish the pasta into a beautiful bowl or plate and enjoy immediately while it’s hot and fresh.
