Chicken & Mushroom Bread Pizza

Sometimes, you just need a quick dinner, but those can often end up being rushed and underwhelming. That’s why I’ve been making this chicken and mushroom bread pizza for years—it never lets me down! It’s simple, delicious, and always a crowd-pleaser. My friends and family constantly request it, and once you take the first bite, you won’t want to stop! My mouth is watering just thinking about it!

Prep Time – 20 Minutes
Cook Time – 10-12 Minutes

Ingredients

  • 1 French Baguette (9.5-10 oz)
  • 2 Large Chicken Breasts (1 Pound), cut into cubes
  • 1/2 Tsp Minced Garlic
  • 1/2 Tsp Olive Oil
  • 3 Tsp Softened Butter, divided
  • 16-oz Fresh Gourmet Blend Mushrooms (Or use 8-oz White Button and 8-oz of Portabella), Sliced (You can use 10-oz of canned mushrooms if you don’t have fresh)
  • 1/2 Tsp Salt
  • 1/2 Tsp Pepper
  • 1/2 Cup of Lite Sour Cream
  • 1/2 Cup Fresh Grated Parmesan Cheese
  • 1 Cup of Italian Blend Cheese 
  • Pizza Seasoning or Italian Seasoning

Instructions

  1. Preheat your oven to 375°.
  2. Slice the baguette in half and place on a long baking sheet or a long sheet of double foil if you don’t have a long enough baking sheet.
  3. Use your fingers to remove the desired amount of bread in between the crust on both halves. You want it as hollow as possible to hold the toppings, yet no holes in the bottom or the sides. Set aside.
  4. In a small bowl, mix together the sour cream, grated parmesan cheese and 2 teaspoons of butter.  Set aside.
  5. In a medium skillet, melt the remaining 1 Tsp of the butter and the olive oil. Add the chicken and cook until you get a little bit of brown color on the chicken.  Add the minced garlic and stir about 1 minute longer. 
  6. Add the mushrooms, salt and pepper and cook for another 3-4 minutes or until mushrooms are desired consistency.
  7. Spread the sour cream and parmesan cheese mixture equally in each of the hollowed out baguettes from end to end. 
  8. Top each half of the baguettes with the chicken and mushroom mixture, pressing down to let it fill in the crevices and make a flatter top.
  9. Cover each half with desired amount of Italian blend cheese and sprinkle with the Pizza Seasoning or Italian Seasoning.
  10. Carefully place in the preheated oven and cook for 10-12 minutes or until your cheese has browned slightly on the top.  You can also place under the broiler on low until your cheese browns after the first 10 minutes of baking.

The only thing better than this incredible bread pizza is enjoying it on the balcony of one of our Premium Beach Condos. With breathtaking views of the Gulf and the Pier, and a sunset that feels close enough to touch, the experience is pure bliss. Paired with a glass of your favorite wine, it’s the perfect way to relax and indulge.
