“No need to wrap your head around it, just wrap your hands around it.”
Whenever you think of making something quick and easy for lunch or dinner, most people might go for sandwiches, but my mind almost always goes to sandwich wraps because, to me, sandwiches can get a little boring. Not only are wraps a great way to use up leftovers you might have in your refrigerator, but they’re also very versatile and you can take them with you anywhere. They are a breeze to make, and they are very easy to handle. It’s like wrapping all of your favorite sandwich fillings into a blanket, all cozy and ready to bite into!
Anyway you decide to wrap it, be it in a tortilla (low-carb or gluten free), or even lettuce, they will turn out to be a huge success at your next picnic or trip to the beach. When your crew gets hungry, they can just grab and go. Today, I’m going to share some of my favorites that I’ve created over the years that are my go to for that quick and easy dinner or picnic while at the beach. Buffalo Shrimp Wraps
My husband and I love buffalo anything and one night I had a box of breaded popcorn shrimp I’d picked up at the store. I wasn’t sure what I wanted to make with them, but just the popcorn shrimp itself didn’t seem that appetizing to me. I found some flour tortillas in the pantry and the thought occurred to me to make a shrimp wrap out of them. It became an instant “favorite” that we eat at least twice a month, if not more!
Ingredients
- 3-4 large flour tortillas (you can use gluten-free or low carb if you prefer)
- 1 box (12-oz) of Wild Caught Crunchy Popcorn Shrimp (we prefer Kroger Brand)
- 1 8-oz package of Queso Quesadilla Shredded Cheese (we prefer Kroger Brand)
- Chopped Lettuce or Cabbage to add some crunch, to taste
- Mild Buffalo Sauce (we prefer Sweet Baby Rays)
Instructions
- Cook the popcorn according to package instructions
- Once shrimp is done, put into a bowl and lightly coat with the buffalo sauce, stirring until all pieces are coated
- Lay out 3-4 tortilla wraps and spread some cheese long way on the side closest to you
- Cover with the popcorn shrimp, evenly among the wraps
- If adding lettuce or cabbage, top with amount desired
- Roll up, folding the sides in as you go (see above photo or video)
- Toast each side of the rolled up tortilla until lightly browned and cheese inside has melted (optional) by heating in a pan for 1-2 minutes per side on medium heat, watching carefully not to burn
- Serve with ranch on the side, more of the buffalo sauce, or both.
Bacon Chicken Ranch Wrap
Featured in the lead photo above, these are so delicious and you can mix this up anyway you prefer. Add tomatoes or cucumbers, omit lettuce. But, whatever you decide, they are great, on the go wraps to please your pickiest eater.
Ingredients
- Chicken – you can use leftover fried chicken, grilled chicken cut into pieces, canned chicken, rotisserie chicken or popcorn chicken strips or tenders. We prefer to use the pre-made grilled chicken to make it quicker and easier for us. You’ll want about 1-2 pounds to make 4 wraps.
- 8 slices of bacon (regular or turkey bacon), cooked and crumbled or a good quality bag of bacon bits/pieces
- 1/4 – 1/2 cup of ranch, to taste
- 1-2 roma tomatoes, diced
- 4 lettuce leaves
- 4 large flour tortillas
Instructions
- Cook chicken if needed or use pre-cooked chicken and cut into bite sized pieces
- Lay the tortillas out flat and place a piece of lettuce on each one
- Divide the chicken evenly and place on top of the lettuce leaves
- Add the bacon and tomatoes evenly over the top of the chicken and drizzle with about a tablespoon of the ranch dressing
- Roll the wraps (as instructed above), by tucking in the sides to roll them like a burrito
- If desired, brown all sides as instructed above
Caprese Wrap
I LOVE a good Caprese Salad, but found it difficult to take to the beach or even on picnics with me. It was hard to transport, and eat, in my opinion. So, I decided that if it was made in it’s own “carrying” vessel, like a wrap (a sundried tomato basil wrap to be exact), it would be a perfect addition for my beach trips. While this is amazing as is sometimes, for an extra kick, I add shredded chicken.
Ingredients
- 2-4 large sundried tomato basil wraps (we prefer Mission brand)
- Shredded chicken (canned or rotisserie), optional
- Basil pesto, to taste
- 1/2 cup of lightly packed fresh basil leaves
- 1 large tomato, sliced thinly
- Shredded mozzarella cheese or sliced fresh mozzarella, to taste (I use about 8-oz for 4 wraps)
- Balsamic Glaze, to taste
Instructions
- If necessary and using, shred the chicken
- Lay out the sundried tomato basil wraps (or preferred wrap of your choice)
- Spread a thin layer of the basil pesto on each wrap
- Equally spread the fresh basil leaves on one half of the wrap, closest to you, followed by the tomato
- If using chicken, spread equally over the basil leaves
- Drizzle the balsamic glaze over the top of the chicken and roll the wraps (you know the drill by now)
- Take the remaining balsamic glaze with you to serve with the wraps
To Present and Serve
For all of the wraps above, you can wrap them in plastic wrap or a baggie until ready to serve, but I really love the look of wrapping them with sandwich wrapping, wax or parchment paper about 2/3’s of the way up from one end (leaving the other end exposed to start eating from) and tying them off with some string in a bow. You could even wrap them in a paper towel and tie them, offering a built-in napkin for less mess and ease of eating. They just look fun and oh so appetizing!

Be creative with your wraps. Use lettuce leaves, cabbage leaves or any kind of wrap that sounds good to you. The options are endless. Try your hand at dessert wraps, simply by using chocolate hazelnut spread with strawberries and bananas or PB&J, so they can join in on the fun with your sandwich wraps (and your taste buds). You’re on vacation, so make it fun and easy on yourself!
