On my recent visit last month to Panama City Beach with Premium Beach Condos, it was a working trip for us. We accomplished everything we set out to do and our days were very fulfilling, yet long, so the last thing we wanted to worry about at the end of the day was dinner. This picture doesn’t do this recipe justice and I only wish this had a smell button to push!
After our work was complete at the end of the day, we walked into our condo to the smell of this fabulous dinner. All that was left to do was shred the chicken, add some cornstarch mixed with water to thicken the gravy, throw together some instant mashed potatoes, and we had dinner in less than 10 minutes on the table! Don’t let the instant mashed potato thing fool you either, they’ve come a long way with them and Garlic Mashed Potatoes were the perfect match for this recipe! And, as you can see by the photo, we enjoyed our dinner just as the sun was setting with a spectacular view!
I can’t take any credit for this recipe, it was all thanks to Eating on a Dime and, not only was it delicious, it was very economical. There were just the two of us and we had leftovers for days (which was a GREAT thing for us), so you could feed 4 people easily on this recipe. This recipe has a ton of five-star reviews and I couldn’t agree more!
Ingredients
- 4 Boneless Skinless Chicken Breasts
- 1 Can Cream of Mushroom Soup (10 ounces)
- 8 ounces fresh sliced mushrooms (We decided that 16 ounces of mushrooms would have been better)
- 1 packet Onion Soup Mix (I’ve used Mushroom Onion Soup Mix as well, as I had it in my pantry)
- 1 1/2 cup Cbicken Broth (I used 1 cup for a thicker gravy)
- 1/2 teaspoon Dried Thyme Leaves, Crushed
- 1/2 teaspoon Black Pepper
- 1 Tablespoon Cornstarch
- 2 Tablespoons Cold Water
Instructions

In a small mixing bowl, whisk together the cream of mushroom soup, onion soup mix, chicken broth, thyme and black pepper.

Lay the chicken at the bottom of the crock pot. Top with the sliced mushrooms.

Pour the sauce over the top of the chicken and top with the mushrooms.

Cover and cook on low for 6-8 hours or on high for 3-4 hours.

Remove the chicken from the crock pot and shred it into large pieces.

Stir together the cornstarch and cold water in a small bowl.

Stir this mixture into the crock pot and mix the chicken back into the sauce in the crock pot.

Cover and cook on low for 20-30 minutes until the sauce thickens.

Serve warm and enjoy!
Serving Suggestions
For a twist, you can serve this like you would a beef manhattan by placing a slice of bread (of your choice) on the plate, top with the mashed potatoes and then with the mushroom chicken and gravy.
Shown above, we plated it without the bread, but the chicken mushroom gravy mixture was served over the mashed potatoes with some fresh watermelon on the side.
If you don’t prefer mashed potatoes, serve with your choice of rice or egg noodles and a veggie on the side.
