Pulled pork nachos are my “go to” and an easy to pull together dinner whenever we’re at the campground. So I thought, why NOT make these while I’m at the beach? I don’t know about you, but I’m all about making my life easier while in my happy place, especially when it comes to meals. These nachos can be thrown together quickly, provide an easy clean-up, and they are always a huge hit! You actually might want to double the recipe and make two batches if you’re feeding a crowd. With just a few simple ingredients, you’ll be sure to get a standing ovation and maybe a little extra beach time.
Ingredients:
- 1 16-oz container of pulled pork
- 1 8-oz bag of tortilla chips
- 1 16-oz can of black beans, drained and rinsed (optional)
- 1-2 cups of Mexican blend or taco blend cheese (save some for toppings)
- Banana pepper or jalapeno peppers, to taste
- Red onion, thinly sliced
- Jarred white queso cheese sauce
- Foil lined baking sheet or a throw away foil pan
Optional toppings:
- chopped cilantro
- sour cream
- shredded cheddar cheese
- salsa
- shredded lettuce
Instructions
- Preheat oven to 425°
- Spray or coat the pan with cooking spray or oil
- Arrange the chips on the bottom of the pan and top evenly with pulled pork, red onion, banana or jalapeno peppers (or both), black beans, and cheese
- Bake for 10-15 minutes or until cheese melts
- Remove from oven and drizzle with the white queso cheese sauce
- Serve with your favorite toppings.
