It’s that time of the year. Fall and FOOTBALL! I’m so excited to finally get to watch my favorite teams play and, maybe, just maybe, one of them will make it to the Orange Bowl or Super Bowl this season! It’s a dream that we all have when it comes to our favorite teams, be it high school, college, or professional.
Football season is a time for family and friends to gather around the big screen TV and cheer on their favorite teams! There’s always a few in the bunch (including myself) that tend to get a little rowdy! My Mom used to tell me to pipe down, that “they” couldn’t hear me, but when I did as she wished and they started to fall behind in the game, she’d ask why I stopped yelling! I can’t help myself, I really like to get into the game and I know I’m not alone!!
What’s better than the actual game, however, is the food that is created and eaten by everyone during those 3 hours of that pure adrenaline rush. Did you know that watching football can increase your heart rate to levels similar to those associated with vigorous exercise? That’s why we’re so hungry during the games!
Enough about football, I could go on forever! Let’s make some snacks, all from my cookbook, that will be sure to please your biggest football fanatic! Barb’s Black Bean Salsa
Using simple canned ingredients, this turns out to be such an amazing salsa! It’s simple and easy to make, as well!
Ingredients
- 1 (15-oz) Can of Black Beans, Drained and Mashed
- 1 (15-oz) Can of Black Beans, Drained and Left Whole
- 1/4 Cup of Finely Chopped Onion
- 1/4 Cup of Finely Chopped Roma Tomatoes
- 1 Tsp of Minced Garlic
- 1 (7-oz) Can of White Shoepeg Corn
- Chopped Jarred Jalapenos, to Taste
- 2 TBSP Fresh Lime Juice
- 1/4 Cup Chopped Cilantro (Or to Taste)
- 1/2 Tsp Salt
- 1/2 Tsp Hot Sauce
Instructions
- Place one can of black beans in a bowl and, using a potato masher or a fork, partially mash the beans until coarse and slightly pasty
- Add the remaining ingredients and mix well
- Season to taste with salt and hot sauce
- Chill for a few hours for best flavor and serve with your favorite tortilla chips or use as a salsa topping
David’s Cheese Cookies
Don’t let the name fool you, there’s nothing sweet about these. My son (David) named them “cookies” when he was little because they were shaped in squares. These are a breeze to make and so delicious!
Ingredients
- 3 Eggs
- 1 Cup of Flour
- 1 (16-oz) Can of Evaporated Milk
- 1 LB of Sharp Cheddar Cheese, Shredded
- 1 LB of Colby Jack Cheese, Shredded
- 1 (2.5 oz) Package of Real Bacon Bits
- 1 (12-oz) Jar of Sliced Jalapeno Peppers (or Green Chiles for a milder flavor)
- Hint: You can substitute the 2 LB’s of Cheese above with Mexican Cheese or any blend you wish
Instructions
- Spray a 9×13 pan with non-stick spray, oil or butter to coat the bottom of the pan
- Arrange the jalepeno (or green chili) peppers and real bacon bits on the bottom of the pan, spreading evenly
- Layer the cheeses next, spreading evenly over the peppers and bacon bits
- Mix the eggs, flour and evaporated milk and pour over the cheese
- Bake at 400° until golden brown, approximately 30 minutes
- Cool slightly and cut into squares and serve warm, although these are good at room temperature
Sausage Cheese Balls
These are easy to throw together and bake right in the oven for 20 minutes. You can’t go wrong with these tasty little gems. This recipe makes about 6 dozen balls so you can half the recipe if you don’t need that many.

Ingredients
- 2 LBS of Ground Turkey Sausage (or Regular Sausage)
- 1-1/2 Cups of Biscuit Mix
- 4 Cups of Sharp or Extra Sharp Cheddar Cheese, Shredded
- 1/2 Cup Onion, Finely Chopped
- 1/2 Cup Celery, Finely Chopped
- 1/2 tsp Minced Garlic
Instructions
- Preheat oven to 375°.
- Mix all ingredients and roll into 1″ balls
- Bake 15-20 minutes on an ungreased cookie sheet until golden brown
- Drain on paper towels and serve
Whether you’re enjoying the “game” with friends or family, remember that it’s a time to gather, eat, drink, celebrate, and most of all, make memories! Some of my fondest memories come from watching football with my family. Even if you’re not cheering on the same team, you’re all there for the same reason.
