When you’re on vacation, the last thing you want to worry about is cooking after a long day in the sun! This recipe for mozzarella pesto chicken pasta is the perfect thing to throw in the crock pot before you head out for the afternoon and come back to a delicious smelling nearly finished dinner!
Ingredients:
- 6 Chicken Breasts
- 1 Stick of Butter
- 12 oz Pesto
- 1 Lemon
- 4 cups Mozzarella
- Rotini Pasta
- Grated Parmesan
Instructions:
- Put chicken in crock pot and season with salt and pepper.
- Top the chicken with pesto
- Slice the butter and place it on top of the chicken
- Squeeze half of the lemon over the chicken
- Cover and cook on low for 5-6 hours
- After 5-6 hours, remove the chicken from the crock pot and shred the chicken
- Place the chicken back in the crock pot on low
- Cook the pasta according to the instructions on the box
- After the pasta is done cooking, drain and place in the crock pot with the chicken
- Mix the pasta in with the pesto sauce and chicken
- Add the mozzarella cheese and cook for 15 minutes
- Top the dish with lemon juice and parmesan as desired
- Perfect with a side of garlic bread too!
